An Easy, Healthy, Money Saving Breakfast

Ok, so I really struggled with a title for this post. Pretty much anything using the words "Eggs" and "Freeze" could be easily misconstrued. Brit's idea of "Freezing eggs: Breakfast for women on the go", was pretty accurate, but I was a little afraid someone might get the wrong idea about the kind of eggs I'm talking about eating for breakfast {I'm talking about chicken eggs, just in case there was still some confusion}. Also, men can enjoy this too!  

Well, now that I've cleared that up, let's get into the purpose of this post. One of my least favorite things to do in the whole wide world is throw away food that has crept past it's expiry date. It's like dumping a handful of $$ right into the trash. Probably the number one thing that flirts with expiring in our home is eggs. We can never seem to move through them fast enough, whether we buy the 1/2 or full dozen carton. But I refuse to throw them out! Instead, I make a freezer friendly egg muffin. 
Just before the eggs go bad, I'll dedicate 25 minutes to making the perfect healthy breakfast that I'll be able to prepare in less than a minute. 

Preheat the oven at 350. 
I crack each egg in a glass/bowl and stir them up, as if I were scrambling them. 
Grease a muffin tin, and pour each egg into a muffin section. I add a dash of salt and pepper, and maybe a pinch of some cheese if we have some. 
Bake for 15 minutes. They'll be fluffed up at first, but then deflate when they're removed from the oven. 
After they've cooled, I toss them in a Tupperware and throw them into the freezer. 
 Whenever I'm feeling rushed in the morning and need to grab a quick breakfast, I pop the egg in the microwave for 45 seconds {still in the tupperware, with the lid cracked open a tad}. It's seriously ready to eat that fast.
A few of the things I love about this:

  1. It saves money. I'm not just throwing $$ in the trash if we don't finish the eggs in time. 
  2. It's super, super simple. It takes about 5 minutes of work on the front end, and then I can have a healthy breakfast ready in 45 seconds. 
  3. It's healthy. Yes, I know I mentioned that already, but if I didn't have these I would probably resort to pop-tarts, or nothing {eek! I know, you should never skip breakfast}. 

While they don't appear to be the most appetizing thing, they're really not that bad. Obviously, eggs served sunny-side-up with some bacon and toast would be WAY better, but who has time for that when you're rushing to work, school, the gym, the moon, etc.
